*Foglie di Belga al salmone
INGREDIENTS - (4 portions)
  • 16 endive leaves
  • 125 gr of smoked salmon
  • 125 gr whipping cream (35%)
  • 1 tbsp French onion (finely chopped)
  • 1 tbsp chives (whole sprigs)
  • 1 tbsp tarragon (finely chopped)
  • 1 tbsp lemon juice
  • Salt and pepper
METHOD
  • -Whip the cream and add all the ingredients except the chives
  • -Wash endives and cut the salmon into thin slices
  • -Spread 1 tsp of the cream mixture on the endive…top with a slice of salmon and chives
