*Foglie di Belga al salmone

INGREDIENTS - (4 portions)
16 endive leaves
125 gr of smoked salmon
125 gr whipping cream (35%)
1 tbsp French onion (finely chopped)
1 tbsp chives (whole sprigs)
1 tbsp tarragon (finely chopped)
1 tbsp lemon juice
Salt and pepper
METHOD
-Whip the cream and add all the ingredients except the chives
-Wash endives and cut the salmon into thin slices
-Spread 1 tsp of the cream mixture on the endive…top with a slice of salmon and chives
