*Lobster Roll
INGREDIENTS - (4 portions)
  • 2 live 1 – 11/4 pound lobsters
  • 2 tbsp mayonnaise
  • 2 hot dog buns
  • 2 tbsp melted butter
  • 2 large lettuce leaves
  • Salt
  • Pepper
METHOD
  • Bring a large pot of salted water to a boil and cook the lobsters for 10-15 minutes depending on the size.
  • Run the lobsters under cold water
  • When the lobsters are cool enough to handle, crack the shells and extract the meat.
  • Cut the meat into chunks no smaller than ¾ inch
  • In a large bowl, toss the lobster with the mayonnaise and season with salt and pepper. Reserve
  • Brush the exterior of the buns with butter and toast them in a hot skillet until they are golden on both sides
  • Place one or two lettuce leaves inside each roll, fill with the lobster and serve!
