Apple Cake
Recipe from Elena Faita
Ingredients
300gr of 00 flour
16gr dry cake yeast or 1 tablespoon of baking powder and 1 tablespoon of vanilla extract
150gr of sugar
3 eggs
100gr of soft butter
100ml of milk
4 diced Cortland apples
Zest of 1 whole lemon
Pinch of salt
Method
Preheat the oven at 350°F
In a bowl , beat the butter with the sugar.
Add eggs one at a time and mix well.
Add the milk and mix well.
Stir in the flour, yeast and salt.
Add the apples and lemon zest and mix well.
Put the cake mixture in a 24cm pan Emile Henry which has been previously buttered and floured.
Bake 40 minutes.
Remove from the ovenand let cool.
Serve with icing sugar, whipped cream, ice cream or cinnamon sugar.
