*Frittata aux épinards de grand-maman

INGREDIENTS - (4 portions)
280g (10oz) spinach cooked and chopped
1 small onion, finely chopped
2/3 cup grated parmesan cheese
3 tablespoon olive oil
4 tablespoon milk
Salt and freshly ground pepper, to taste
In a medium bowl, whisk eggs. Add then by whipping the milk and the cheese.
Season the mixture with salt and pepper.
In a non-stick fry pan over medium high heat, heat olive oil. When olive oil is hot sauté onions.
When onions become transparent, add the chopped spinach.
Let cook 2 minutes before adding the egg mixture.
Shake slowly the frying pan so that the mixture divides up uniformly on the entire surface.
Let cook 3-5 minutes.
Carefully, flip frittata onto a plate and then slide back into the pan to finish cooking the other side, about 3-5 minutes. Serve immediately.
