INGREDIENTS - (4 portions)
2 live 1 – 11/4 pound lobsters
2 tbsp mayonnaise
2 hot dog buns
2 tbsp melted butter
2 large lettuce leaves
Bring a large pot of salted water to a boil and cook the lobsters for 10-15 minutes depending on the size.
Run the lobsters under cold water
When the lobsters are cool enough to handle, crack the shells and extract the meat.
Cut the meat into chunks no smaller than ¾ inch
In a large bowl, toss the lobster with the mayonnaise and season with salt and pepper. Reserve
Brush the exterior of the buns with butter and toast them in a hot skillet until they are golden on both sides
Place one or two lettuce leaves inside each roll, fill with the lobster and serve!
