
Roasted red pepper and capers pesto

Ingredients
6 Portions
1 roasted red pepper, diced
½ diced red onions
15 gr small unsalted capers
½ cup of parsley
30 gr grilled pine nuts
100 gr goat cheese or fresh ricotta (if desired)
75 ml olive oil
Salt
Method
In a food processor, add the roasted pepper, red onions, capers, parsley, pine nuts and cheese (if desired).
Add oil and salt. Mix until you get a creamy pesto.
