
Mascarpone and roasted pepper penne

Ingredients
4 Portions
400 gr of penne
2 roasted yellow peppers and cut into strips
1 roasted red peppers and cut into strips
100g of smoked pancetta diced
3 shallots, sliced
2 tablespoon chopped basil
3 tablespoon mascarpone
4 tablespoon olive oil
Salt
Method
In a skillet, heat the oil, cook the pancetta (must be crispy).
Add the shallots.
Stir in peppers, basil and mascarpone and cook for 2-3 minutes.
Cook the pasta in boiling and salted water.
Put pasta into the sauce, sprinkle with Parmesan cheese and serve.
