Onion soup

Ingredients

4 Portions

2 large Spanish onions (chopped)
½ cup of white wine
2 branches of rosemary
5 cups of chicken broth
1 cup ham (diced)
1 cup bacon (diced)
50 g of butter
1 tablespoon of olive oil
Croutons (country bread or baguette)
2 cups of a mixture of Gruyère and Emmental (grated)
Salt and pepper

Method

In a saucepan melt the butter and oil. Add onions and caramelize.
Add ham, bacon and rosemary. Season with salt and pepper.
Add the white wine and reduce by half.
Add broth and simmer gently for about an hour.
Meanwhile, grill the croutons.
When the soup is ready, pour it into a bowl that holds the heat well and cover it with croutons and the cheese mixture.
Grill the soup under the grill until the cheese is golden brown and serve.
