Ingredients
8 Portions
500ml mascarpone cheese
5 egg yolks
5 egg whites
7 tbsp sugar
500 ml espresso coffee
1 box Pavesini cookies
150 ml Sambuca
Cacao
Method
The espresso coffee and sambuca are to be mixed together and cooled.
Blend egg yolks and sugar until smooth (mixture will become pale in color).
Add mascarpone cheese and mix well.
Blend egg whites until they form soft peaks.
Fold egg whites into the mascarpone mixture.
Dip the cookies one by one and fill the bottom of a lasagna dish.
Cover cookies with half the mascarpone mixture.
Sprinkle with cacao.
Repeat the steps and place in fridge approx. 12-24 hours.
