
Mini Muffins with Coureur des Bois

Ingredients
36 Portions
200g flour
200g sugar
100g butter
3 eggs
3 tbsp Coureur des Bois
1 pinch salt
1 tsp baking powder
Method
Preheat oven to 400F.
Melt the butter and set aside. In a bowl whisk the eggs and sugar.
Add flour, salt and baking powder using a sieve.
Mix with a spatula and add melted butter and Coureur des Bois.
Leave for one hour in the fridge.
Add 1 tsp. dough in each baking tin and bake for 12 minutes.
Enjoy your muffins with a little icing sugar, accompanied by a delicious coffee!
